Cedar Plank Chinook Salmon & Caper Sauce

Cedar Plank Chinook SalmonCaper Sauce:
1 cup light mayonaise
2 Tbls capers
1 Tbls fresh squeezed lemon juice
3-4 splashes of tobasco sauce
1/4 teas. worchestershire sauce
1 Tbls fresh chopped taragon or dill weed

Mix all together, chill. Sprinkle with paprika and serve as a condiment along side the plank salmon with lemon wedges.

Plank Salmon:
Soak a 1/4-3/8 inch Cedar Plank in water for approximately 3 hours. Place the salmon fillet skin side down on the plank and season with garlic salt, Lawry's salmon seasoning and lemon juice. Cook on the BBQ over medium heat for approximately 20 minutes, until the center flakes when penetrated with a a fork. Be sure to put the cover down to hold the smoke flavor in. To serve, leave the plank on the BBQ slide the salmon onto the serving tray, the skin will stick to the plank.
