India Tree Demerara Sugar
is milled on the island of Mauritius off the coast of Africa. It is rich in molasses and
retains much of the flavor typical of the cane which grows there on
volcanic ash. "Demerara" refers to the place in Guyana, West Indies, where this type of large-crystaled sugar originated many years ago. Use India Tree Demerara Sugar
on cereals and yogurt, in coffee, and for glazing hams. Use it as a dessert topping and for decorating cookies.
Once open,
store Demerara Sugar
in an airtight jar or canister. If sugar hardens, place it in a bowl
and cover the bowl with a wet cloth until the sugar softens again.
