Tuber Aestivum Vitt is the scientific name for the Summer Truffle, also known in Latin as Tartufi Estivi. Since these truffles are also black in color, they are commonly referred to as Black Summer Truffles. The Black Summer Truffle has a thicker skin and when fresh will last longer than a White and Winter Truffles.
Urbani Black Summer Truffles are preserved to maintain their freshness and high quality by capturing the mouthwatering sweetness that some have described as "chocolaty". Since the Black Summer Truffle has a more delicate flavor, it shouldn't be used in dishes that are cooked. Like good
extra-virgin olive oil, the heat will destroy the flavor. Instead, shave thin slices of the truffle onto dishes to finish them.
